Okay, gotta admit. I LOVE to serve anything that’s quick and easy, including cereal. But to be honest, the GOOD stuff, especially the gluten-free good stuff, is almost always expensive, even at the grocery outlet that I frequent, and it just doesn’t fit into my big family budget.
I’ve had this mental block for the longest time when it comes to making granola… I thought… it’s SO HARD!!! I really didn’t feel like taking extra time to make a complicated recipe. It didn’t seem quick and it sure as heck didn’t seem easy.
But when my kiddos asked if I would make them some granola, I honestly couldn’t resist… so I queried my Facebook friends and got a list of granola recipes and they all seemed fairly easy to make. With the BIG clan I have to feed, I knew that I would need a much larger batch then what the recipes I found offered, so we got to work tweaking the recipes and making one of our own.
Gluten-Free Granola Recipe
INGREDIENTS
- 9c rolled oats
- 2c dried coconut
- 1c ground pecans (or nuts of choice) ***
- 1c chopped almonds
- 4 tsp cinnamon
- 2 tsp Ginger
- 1 tsp Nutmeg
- 9 T Butter (can swap coconut oil)
- 3/4 c Honey (can sweater with Maple Syrup as well)
- 1/2 tsp salt
- 3 tsp vanilla
- 3 c raisins
— Set oven to 250° F and bake for 75 minutes
— I suggest using cake pans or deep cookie sheets to make this.
INSTRUCTIONS:
- Mix first 7 ingredients together in a large bowl.
- In a sauce pan on medium low heat, melt together the honey and butter.
- Once melted, take off burner and add vanilla and salt.
- Slowly stir granola while adding honey mixture until combined.
- Add raisins and stir until combined.
*** You can leave nuts out and add something else or leave it as is if you have nut allergies in the family.
FUN FAMILY TIP!
If you’re making this with your kiddos, have them scrub their hands, and then help you mix up the granola in a big bowl with their hands. WARNING!!! It’s squishy, a bit messy, but a LOT of fun for them and a GREAT way to make some memories.
Right after our granola was made, the kids dug into it with a vengeance! (Mama did too!) Unfortunately, in all the excitement, this mama forgot to take pics of them helping out. I was lost in the moment. :)

To be honest, it’s not portioned for the 21 Day Fix… because of the mix of honey and carbs. It’s mostly to have a healthy cereal option that’s gluten-free.
I would say though… if you did use a portion container, I would count it as a yellow and a blue. It wouldn’t be a perfect answer… but honestly… I would think it would be close enough ;)
