Instant Pot Pot Roast in 35 Minutes

I’m a big fan of the instant pot. When 4:30pm would roll around… or 5pm (which is more likely the case) and dinner was ready, I used to get into a big panic.

“What can we make for dinner? Do we have any meat that’s thawed out? Oh shoot… it takes SOOO long to make the brown rice!”

Questions like that were constantly hitting me in the early evening. That is… until I got my Instant Pot pressure cooker!

I think I’m in LOVE! Can you actually be in love with a device? Because if I could… this one would rival my iPhone in a second!

With an instant pot, you can… Cook frozen hamburger meat in 25 minutes. Hardboil eggs in 6. Make toss and serve brown rice and salmon in 18!

It was like a dream come true!

So tonight when it was 4:30, I waltzed into the kitchen ready to throw together a pot roast and have it ready by 5:30. And you know what? I DID IT!

INGREDIENTS:
1 chuck roast (mine was about 3lbs)
3 lbs baby golden potatoes (sliced in half)
2lbs carrots (peeled and cut up)
1 onion – cut up
4-6 cloves garlic
1 TB heaping Beef “Better than Boullion” mixed in one cup water (or 1c beef broth)
Himalayan Salt (to taste)
Pepper (to taste)

  1. Brown the chuck roast in the Instant Pot and salt & pepper the outsides, then remove from the bottom of the pot.
  2. Toss in potatoes, carrots, onion and garlic and add salt & pepper on the layers.
  3. Pour the beef broth over the vegetables.
  4. Add the chuck roast on top.
  5. Seal and set for 35 minutes.
  6. When it’s done, let the steam naturally release, then transfer to a dish and serve.

I’ll admit it freely! I get overwhelmed easily with planning meals and cooking dinner. It’s no lie that the instant pot has changed my life. Instead of panicking when dinner isn’t ready, I now see it as a challenge. What can I toss in the magic pot and have come out healthy and tasty with minimal effort on my part?

Is it always perfect? No… sometimes it’s a great big flop. But at least I’m trying harder than before and I’m able to get some more big wins in the kitchen.
