21 Day Fix Easy BreakfastWith a crazy schedule with 5 (almost 6) kids, home, work, TONS of soccer, and my overall struggle with completely organizing my days, I just don’t have or want to take the time on a regular basis to make a nice breakfast. Since I usually have my Shakeology for lunch, I stick with some form of eggs for breakfast. They can be easily dressed up or kept plain with the spinach, eggs and no extras.

Either way, I have a great healthy breakfast in minutes, and I didn’t really have to think about it, which for this busy mama is a HUGE plus!

21 Day Fix Easy Egg and Veggie Breakfast

  • Avocado oil
  • 1/2 bell pepper
  • 2 scallions (mini onions)
  • 2 handfuls of spinach (sometimes I chop it a bit)
  • 6 eggs (3 for me & 3 for hubs… I would usually use two, but I’m preggers)
  • Bonus extra: Pico de Gallo or Salsa

Heat your pan with the avocado oil, then add the bell pepper, onion and spinach. Cook it up until the spinach starts to wilt, then add in your eggs.

Fry it all up, and then serve! Garnish with jalapeños if you dare!

In this video, we had some left over pico de gallo, so I threw it on the side. You can also use hot sauce like Texas Pete or some salsa (without sugar in it) to spice up your eggs.

HUNGRY TIP: Veggies that don’t naturally have a lot of sugar or starch, like tomatoes, spinach, bell peppers, mushrooms, jalapeños, etc are pretty much (but not exactly) free foods… meaning…  you can eat a bit more and not really eat a ton of extra calories.  So if i’m going to splurge on anything extra if I’m super hungry, I’ll just add in more veggies and hot sauce to fill me up!

QUICK TIP: Know how those BIG bags of spinach can go bad? As soon as you think that bag is starting to turn, throw it in the freezer! Then you can just grab a handful of frozen spinach leaves and crush it into the pan when you’re frying everything up. THAT’S the really easy way to make it :)
