Chelle’s 21 Day Fix GUILT-FREE Southwestern Salad

Guilt-free-southwestern-saladI think the BEST creative genius often is a result of desperate need… today being case in point. I was STARVING and REALLY wanted some comfort food. And what’s more satisfying than a super yummy taco salad?

To be honest… I go through phases of loving balsamic dressing and then… not so much.  Today was one of those days, and knowing I couldn’t pile on the sour cream, I was a bit on the cranky side, since that was what I was “a hankerin'” for.

Creative genius did NOT abandon me… thank GOODNESS… and the crazy scientist came out in me and I created this fantastically southwestern salad dressing recipe.

(2 green containers, 1 red container)

1 GREEN container of mixed greens

2nd GREEN container of 1/2 kale/cabbage mix (or more greens) and the other half veggies of your choice.   I used cucumbers and tomatoes.

1 RED container of ground turkey breast fried (no oil) in a pan and seasoned to taste with chili powder, cumin & garlic powder.  (I usually pour it on!)

DRESSING RECIPE (serving size = 1 orange container)

1 RED container Greek FULL FAT Yogurt (Full fat means you’re using 1 of Autumn’s teaspoons as well.)
1/2 Lime
1T Frank’s Red Hot Pepper Sauce
Cumin
Chili Powder
Garlic Powder
(Onion Powder optional)

Mix it all together in a bowl and add the spices to taste.  For the spices I used approximately 1/4 tsp garlic powder, 1/2 – 1 tsp Cumin, 1/2 – 1 tsp Chili Powder.

I honestly just mix it until it tastes gooooood!

You can count the dressing as an orange container.  Or… if you REALLY want to slab it on… you might start cutting in to one of your red containers :)
